Potato Balls Recipe

Basic potato balls recipe. This is similar to Tokyo Tokyo’s potato balls. Choose your own dip, but personally, I think the garlic mayo dip I made for my homemade mojos work for this one too.

Ingredients:

Mashed potatoes
1 egg, lightly beaten
3/4 cup shredded cheddar cheese
1/2 cup chopped onions
1/2 cup dry bread crumbs
Salt and pepper for seasoning
Oil for frying

Season mashed potatoes with salt and pepper. Add the shredded cheese, chopped onions and beaten egg and mix well. If you want added flavor in your potato balls, you could mix bacon bits and ease up on the salt.

Shape the mashed potatoes into small balls. Roll in bread crumbs and let the mashed potatoes absorb the bread crumbs first. If you fry the potato balls immediately, the bread crumbs won’t stick and you’ll be scooping fried bits of potatoes and bacon bits out of the frying pan. :P So set them aside for at least 10 minutes, roll them again in bread crumbs (optional) before frying in very hot oil.

Drain the potato balls using a paper towel before eating. Enjoy!
